STEP 1 

Preheat oven to 200°C. Line a baking tray with baking paper. Place the vine-ripened tomatoes on lined tray. Roast for 15 mins or until the tomatoes begin to collapse.

STEP 2 

Meanwhile, cut half the Perino tomatoes in half. Heat oil in a large deep frying pan over medium heat. Add the onion and cook, stirring occasionally, for 3 mins or until the onion softens. Add the capsicum and garlic. Cook for 2 mins or until the capsicum is tender.

STEP 3 

Add the eggplant, zucchini and Perino tomatoes to onion mixture. Cook for 10 mins or until the tomato breaks down and the vegetables are tender.

STEP 4 

While vegetables are cooking, bring stock to the boil in a saucepan over high heat. Reduce heat to medium-low. Gradually add the polenta in a thin, steady stream, whisking constantly. Cook, stirring with a wooden spoon, for 5 mins or until the polenta thickens.

STEP 5 

Divide the polenta among serving bowls. Top with the vegetable mixture, fetta and vine-ripened tomatoes.

I asked a guy in the Woolworths and he looked at me like I just landed from Mars.

Really appreciate if someone could offer a hint ?

My local coles and other stores have it next to the flour and yeast, how do I know.. mum makes me go buy it :/

You can definitely buy it in both Woolies and Coles

At Coles you can buy Instant, gluten free and ready to serve Polenta.

Also try the "health foods" aisle in and amongst the gluten free / organic etc foods.

Can buy at both the big chains usually.

In Coles you should find polenta in the International Section.

Local store has it there.

Even my local tiny foodworks has it.

Polenta is on the top shelf above the flour in my local Woolworths.

Not that yummy in my opinion.

The first time I had it was in southern Switzerland in a farm house set in the Alps. That was the yummy part.

It was made and spread over a table cloth set on the table. Next was added cheese and mushrooms and everyone dug in.

Apart from the occasional slice of Orange & polenta cake if I have never had a polenta dish I would not miss it.

I guess I am being unfair to polenta as it is just basically a grain and used like pasta to carry flavours. Although on its own bland and boring. ;-)

Edit: Yes and easy to find in Woolies and Coles.
Hint: Just keep asking staff.

I find it at the supermarkets near the yeast, flour, etc. and sometimes in the health food section.
I always find polenta at green grocers as well.

I have got it from IGA before which is the lowest tier supermarket chain. If a supermarket such as IGA have it I am sure Coles and Woolworths would have it. Polenta is nowhere near rare or exotic. Go to the Coles and Woolies online shopping site and see if you can find it there.

Last time I found it at Woolies it was in one of those self serve dispensers along with all the nuts/grains you can fill up a bag and print a sticker out for based on its weight.

(Only way I found it was to ask a guy who asked another guy)

Was just going to say this. My local Woolies has polenta on the self-serve-weight-it-yourself dispensers which are located on the organic/health food isle.

Live in the wrong area. None of the Woolies I shop at have this luxury.

Would suit my budget for sure to get just a few grams of some items.
