What are the stars earned at the end of each cup for?
I'm talking about the three stars you get if you come in first on all four races.

They're just a ranking system for the Grand Prix, besides one unlockable.
In previous games (MKW, MK7), if you achieved at least 1 star rank in all cups you'd have a star next to your name online, at least 2 star rank in all cups... two stars next to your name, 3 stars in all cups... 3 stars next to your name online. Sadly, this was not included in MK8. Maybe in a future update this will change.
Achieving AT LEAST 1 star in all cups in Mario Kart 8 will unlock the Gold Standard kart.

They show how well you did.

You'll unlock the gold kart if you earn at least one star in every cup.
Otherwise they are bragging right rewards, if you happen to have three stars everywhere.12 25
Basicall you get stars based on how many points you got over all 4 races. If you get all 60 points you get all three stars. Im not sure on the amount of points you need for one or two, but I believe you need at leased 55 to get a star but Im not sure on the lowest point value you need for the first star, or the second.

What is the 0/6 stars for?
At the upper left after a race, there's a 0/6 stars function. What is it for? What does it do? Does it concern star rankings or something else?

They are for marking your favorite races/highlights. When you go to Mario Kart TV in the main menu, it has recent races posted from you and your favorites are marked with a star. I guess just to find them easier in the jumbled mess of races there.

I have completed both the Mushroom Cup and the Flower Cup in 50cc, getting gold on both. The Mushroom Cup now shows one star beside my gold trophy, and the Flower Cup shows two.
What do these stars mean?

This is your ranking. When you complete a cup, you get a ranking based on your points and your time (and possibly other factors such as how many times you fell off or hit opponents with items). The best ranking is three stars, followed by two stars, one star, A, B, C, D, and finally E (I believe). The best ranking you've ever achieved in a cup is recorded for each cc, so if you redo the 50cc Mushroom Cup and get three stars, that will replace the one star.
Getting higher rankings isn't required to do anything in the game, but once you gain rankings of one star or better for every cup on every cc, the game will display one star alongside your name in races. Same for two and three stars.

the stars (or letters) that appears on the side of each cup is your ranking on that cup and it goes like this (from the best to worst): 3 stars, 2 stars, 1 star, A, B, C, D. I don't know if there's an E. simple explaining: the better you gon that cup, better ranking (Mr. obvious strikes again.), and when you finish all cups on every cc in the game and get at least one star on each cup, the worst rank you have will appear on the side of your name on multiplayer (if you have in almost all cups 2 stars , but you have a cup with only one, a star will apear on the side of your name, if you had 2 stars on every cup, you'd have 2 one the side of your name instead, the same goes for 3 stars.).
it doesn't affect the gameplay, it's just for status.

The stars next to the trophy represent the quality of the way you raced. If you did perfectly, you would most likely get 3 stars.

If you get first place in all your races you get three stars, if you lose one of races you will only get two stars, and so on.

I have always found that if you when by 13 points or more, you get 3 stars. I see a lot of people say it is determined by how long you are in first, how many times you get hit by items, etc. Every time I win by at least 13 points, I always get 3 stars.
