When I was younger I used to occasionally take leftover (refrigerated) sausage, cut it up and throw it in a sandwich for school. Only recently I heard that you can't really keep cooked sausage/meats out at room temperature for over 2 hours?! I used to have them in a plastic bag tucked in the side of my bag for around 8 hours (Usually taking them out at 7am and eating them at 3ish).

What's the actual truth on this? I never got ill from eating them, is there something specific that I'm missing or is this just your average "internet bullshit" that I'm hearing?

I'm a college student without a fridge and I ordered mcdonalds sausages biscuits for breakfast about 14 hours ago and have two extra. My sleep scheduled is messed up and I just woke up so If I eat them now I won't be able to order anything in a few hours when I'm hungry again and everything is closed. So If I order new food to eat now will the sausage biscuits still be good in a few hours once they've totaled like 18-20 hours old?

I cooked a sheet pan meal with cauliflower, broccoli, potatoes, and sausage last night. I wanted to let it cool before I put the leftovers in Tupperware and put it in the fridge, so I turned off the oven and proceeded to completely forget about it and it sat in the oven all night. Can I still eat it or am I risking food poisoning?

Standard advice is 2-4 hours at room temperature max. Sitting in a slowly cooling oven is not ideal. Personally I would chuck it. Food poisoning is not fun.

I wouldn’t. Your downside risk is very high even if the chance of it is fairly low. At, what, 12 hrs. unrefrigerated the risk is certainly not zero.

It's probably fine. Food safety is important, but I think the guidelines are skewed pretty conservatively because there's always that 1-in-a-million chance that there's a problem; and when there are millions of people following the guidelines, half of whom have below-average intelligence, problems will happen.

Ask yourself if a restaurant put that in front of you and said we left it sitting out all night, but cool right? Would you eat it or call the damn health dept.

You're fine. It's fully cooked and left inside a temperature controlled home. If it was left outside in the sun all day it would be different. Or if it had alot of dairy ingredients I'd say to toss it. But it will be safe. I've done that more times than I can count.

I made chicken scarpariello with sausage last night and accidentally left the closed Tupperware out on the counter all night! Do you all think it’ll be okay still? I live in San Francisco by the beach, so it was pretty cold last night (45 degrees). Though it was probably a little warmer than 45 , I have no heating in the house and the window near where it was sitting on the counter was cracked open, so the kitchen definitely was on the cold side. I made a ton and would hate for it to go to waste. Any insight appreciated!!

Yes, also worked in a butcher shop. Depending strongly on the raw sausage, 5 days is about right. Some, like weißwurst, should be eaten within 1-2 days, even refrigerated, because the ingredients go off so quickly. Unrefrigerated, those have like 5 hours.

Hahahaha nah, but I feel like a majority of people throw money away thinking it’s expired because it’s a day or two after the sell by date then poison themselves though.
