Season the Drumsticks

Start by dusting the chicken drumsticks with a basic dry rub.  You could just go with salt and pepper if you want or use something fancier like I used below:

Pretty Good Dry Rub for Grilled Chicken Legs

  • 2 tbls Morton’s Seasoned Salt
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp sugar

Make sure all sides of the legs are seasoned.

Set Your Weber Grill to Medium High Heat

Set up your Weber to be running at Medium High heat.

I like the grill to be running at about 350F but the temperature does not have to be exact.  I do try to keep the grill under 400F so we don’t end up with chicken that is burnt on the outside and raw on the inside.

Once the grill is up to temperature let the cooking grates warm up for at least 10 minutes.  Giving the grates time to warm up is one way to help make sure that the chicken doesn’t stick to the grates.

When I grill chicken legs on my Weber Traveler I place the meaty part of the leg on the inside of the grate with the “handle” of the drumsticks pointed to the outside edge of the grill where the burner tube is located.  You could use the same configuration if you were cooking on a Weber Q1220 or Q2200.

If you are cooking on a Spirit or Genesis don’t worry about how the legs are arranged and just get them on the grill!

Once the legs are on the grill, close the lid and let the legs grill for five minutes.

After five minutes flip the legs over.  Repeat every five minutes until the legs are done.

It should take about 25-30 minutes for the legs to finish grilling.

The legs are technically “done” and safe to eat when they reach an internal temperature of 165F.  However, you do not want to stop grilling at 165F because the meat will still be tough and not fun to eat.

Instead you are looking for a target internal temperature of around 185F.  An easy way to tell when the legs have reached the point when the meat is tender and will readily come off the bone is to wait until the skin bursts open as the meat swells and splits things open.

Add Sauce to the Drumsticks and Serve

I like to sauce chicken legs after they have finished grilling.

Saucing the legs after grilling keeps my grill cleaner which helps the burner tubes last longer.

I think sweet sauces go great with chicken legs, although if you like things saucy you can check out this recipe for Grilled Buffalo Drumsticks.

My chicken leg sauce of choice these days is Sweet Baby Ray’s Sweet Red Chili.  It gives the legs a beautiful shine and tastes great.
