This scrambled egg patty recipe is sure to be your new favorite for breakfast sandwiches! For us, it doesn’t get any better than a meat, egg, and cheese breakfast sandwich. We might flip between bagels and English muffins. We also waver between cravings for bacon and sausage. But that scrambled egg patty is a constant. It's fluffy, juicy, and perfectly shaped to match the bread!

Our love of scrambled egg patties is likely because they're everywhere in Disney’s parks and resorts. We’ve enjoyed them in the Breakfast Waffle Sandwich at Magic Kingdom’s Sleepy Hollow. Even better, they're the heart of Star Wars: Galaxy Edge’s Morning Ronto Wrap. At the resorts, one of our favorite adaptations is Pop Century’s Pop Tarts Breakfast Sandwich (yes, that’s a breakfast sandwich made with Pop Tarts instead of bread!). Even Starbucks and Earl of Sandwich are egg patty enthusiasts.

So why are egg patties so popular at our favorite quick service restaurants? Portability. Scrambled eggs are prone to tumbling out of wraps and sandwiches. Scrambled eggs patties, on the other hand, taste just as yummy while staying put.

While researching how to make our Morning Ronto Wrap copycat recipe, we were surprised to find very little information on how to create a round, scrambled egg patty. While restaurants are able to purchase egg patties in bulk, we couldn’t find them in grocery stores. We tried making one on the stovetop, even in a ring mold, but it's tricky to flip without breaking and typically one side gets burned. So we set out to create an easy scrambled egg patty recipe!

So How Do You Make a Scrambled Egg Patty?

After some eggy research, we learned that the perfect scrambled egg is achieved with water (not milk), and by adding a smidge of baking powder for fluffiness. It took a couple tries to get the right ratio. Our first egg patty was quite juicy thanks to too much water, and had too many air bubbles (thanks to too much baking powder). We finally settled on the our scrambled egg patty recipe and we're so happy to share it!

Using the oven to make scrambled egg patties provides even baking (no need to flip)! As a bonus, there's no need to babysit this egg as it cooks. It's nice to pop it in the oven, and have some time to prepare the other ingredients for the breakfast sandwich while it bakes.

The oven-safe dish you choose for your scrambled egg patties will ensure the perfect circular shape. When choosing a dish to bake in, please use glass or ceramic dishes. Metal bakeware will get too hot and brown the bottom of the egg patty.

It was fun to search our dish collection and find several sizes of flat-bottomed bowls of varying diameters. We tried Pyrex glass storage containers and CorningWare stoneware ramekins and casserole (affiliate links). They all worked great! Just be sure to measure the flat BOTTOM of the dish to determine your egg patty size, not the diameter of the top. Keep in mind that, if you use porcelain, the cook time may be reduced by a couple minutes.

Because different sized pans hold different amounts of scrambled egg mixture, it's important to consult the table in the recipe card below. This table will tell you how much egg, water, and baking powder you need as well as how long it should bake in the oven. Please don't add more egg than the table says, or it will creep up the side of the pan! Each egg patty is relatively thin, measuring at about 1/4 inch thick per patty.

How to make scrambled egg patties

  • This recipe yields 1 egg patty. Please see the table in "Notes" section below for the amount of ingredients to use. This varies based on egg patty diameter. Egg patty will be about 1/4 inch thick regardless of diameter.
  • Large egg(s)
  • Water
  • Baking powder
  • Pam canola oil cooking spray
  • Salt and pepper, to taste

  • Preheat oven to 400 degrees F.

  • Choose a round, oven-safe glass or ceramic bowl with a flat bottom. This diameter of the flat, bottom part of the bowl will be the size of the egg patty.

  • Spray the round, oven-safe glass or ceramic dish with cooking spray. Note: Do not use metal bakeware.

  • Use the table below in "Notes" to find the corresponding number of eggs, water, and baking powder required based on the size of the egg patty.

  • In a separate bowl, whisk together the water and baking powder.

  • Add the egg and whisk vigorously until the mixture is fully combined and nice and even in color. This takes about a minute. You should no longer see any clear clumps (egg white).

  • Pour the scrambled egg mixture into the greased, round, oven-safe glass or ceramic dish. Refrain from adding more egg than recommended as the egg will start to crawl up the sides of the pan.

  • See the table in the "Notes" section below for suggested baking time. Use this time as a guide only, as cook time varies widely based on the type of dish used. We recommend peeking at the egg a couple minutes early, then checking on the egg every minute until done. The egg is done when the center of the egg is set/dry to the touch. Note: we found porcelain bakes faster than glass and stoneware.

  • Season egg patty with salt and pepper, to taste.

  • Enjoy!

Yield: 1 egg patty. For example, for one, 4" egg patty, you will need 1 egg, 1/8 teaspoon baking powder and 1 tablespoon water.
