Preheat oven to 425°.

Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease.

In a bowl, mix the sausage, cream cheese, cheddar cheese, and green onion. Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in a baking dish. Bake 20 minutes in the preheated oven, until bubbly and lightly browned.

Tips on seeding the jalapenos. 1) Wear gloves throughout the entire process, then remove right after so you don’t transfer to sink faucet, cabinet handles, etc. 2) I love my little lemon zester tool for seeding but a small melon baller works great too. 3) As you half and seed the jalapenos and put into a bowl of continuous running water. This helps soften to bake better and removes some heat.

That depends. I have eaten a jalapeño popper that is pretty mild with just a tiny kick and then eaten another that is super spicy. Each jalapeño is different depending on how much of the white membrane and seeds you leave in the jalapeño. The seeds and membrane are the spiciest part of the jalapeño, so if you scrape as much out as you can, your jalapeños will be less spicy.

Sausage Jalapeño Poppers

Sausage Jalapeño Poppers are filled with a rich, creamy, cheesy sausage filling. They are an irresistible appetizer that is perfect for your next party or game day get-together!

INGREDIENTS

22-35 fresh jalapeño peppers
1 lb ground sausage
8 ounces cream cheese
2 cups Monterey Jack cheese, shredded

INSTRUCTIONS

1. Trim the stems from the jalapeños and cut the jalapeños in half lengthwise. Scrape the seeds and any white membrane from the inside of the jalapeños and discard.

2. Preheat your oven to 425 degrees F. Lightly grease a baking sheet.

3. Brown the sausage in a large skillet over medium-high heat. Drain the grease and discard. Transfer the sausage to a large bowl.

4. Add the cream cheese and Monterey Jack cheese to the bowl and stir with a large spoon to combine.

5. Stuff each jalapeño with some of the sausage mixture. Arrange the stuffed jalapeños on the prepared baking sheet. Bake for 15-20 minutes until the filling is lightly browned.

NOTES

If you bake closer to 15 minutes, the jalapeños will be tender crisp. If you bake closer to 20 minutes, the jalapeños will be tender, but there is more of a chance that the filling will ooze out of some of the jalapeños a little.

Depending on the shape of your jalapeños, some of them might tip over a bit during baking causing the filling to slightly spill out onto the pan. If this happens, as soon as the jalapeños come out of the oven, carfully scoop the filling back into the peppers while it is still hot.

If you want to make sure your peppers don't tip over during baking, try baking them in the grooves of a broil pan.
