In tonight’s opening heat, the first four professional chefs step into the MasterChef kitchen. To progress in the competition, they must impress in two challenges: the infamous Skills Test and the Signature Menu round.

The first two chefs face a Skills Test set by Anna, who gives them 20 minutes to open oysters and serve them poached and smoked in a beurre blanc sauce. Can the chefs keep their hands steady enough to open the tricky shellfish without damage and demonstrate enough classic cookery knowledge to show they have what it takes? The remaining two chefs are set a pastry Skills Test by Marcus. Their task is to make a summer fruit tart with jam, crème pâtissière and piped Italian meringue. Who will be able to draw on their experience in pastry to put together the well-executed and sublime dessert the judges are looking for?

Finally, all four chefs have one last opportunity to stand out when they cook their own two-course Signature Menu. This is their chance to show off their style and flair with a tried and tested main course and dessert. Only the best chefs will go through to the quarter-final and move a step closer to being crowned MasterChef: The Professionals champion 2022.

MasterChef is a competitive cooking show television format created by Franc Roddam, which originated with the UK version in July 1990. The format was revived and updated for the BBC in February 2005 by executive producers Roddam and John Silver with series producer Karen Ross.

The revived format is sold internationally by Banijay. Its first international adaptation was MasterChef Australia, which began in 2009, and then the adaptation was executed within several other countries of the world.

The show’s format has been exported around the world under the same MasterChef logo, and is now produced in more than 40 countries and airs in over 200 territories.

The format has appeared most often in four major versions: the main MasterChef series, MasterChef: The Professionals for professional working chefs, Celebrity MasterChef featuring well known celebrities as the contestants and Junior MasterChef, a version created and adapted for children, which was first developed in 1994 and has also expanded to other countries in recent years.

Despite the four major versions, in 2012, Australia created the fifth version called MasterChef All-Stars, for former contestants to raise money for charity. In 2018, Ukraine created MasterChef Teens, for teenage contestants. Brazil created MasterChef: Para Tudo (MasterChef: Stop Everything), a TV show featuring interviews with judges and former contestants, plus recipes and memes, presented by Ana Paula Padrão.

MasterChef The Professionals 2022 episode 1: New judge Anna Haugh, Marcus Wareing and Gregg Wallace preside over the UK’s most revered cooking competition

The BAFTA-winning hit MasterChef: The Professionals is back. Celebrated MasterChef presenter Gregg Wallace, reputed chef Monica Galetti and Michelin-starred Marcus Wareing are together searching for the UK's most exciting cooking talent of 2019. Over seven weeks, 48 professional chefs will face the rigours of the MasterChef kitchen before one is crowned this year's culinary superstar. In this opening heat, six professional chefs from all over the country arrive at the MasterChef kitchen and put their reputations on the line, to stake their claim to the coveted title. The chefs face two daunting challenges, at the end of which, three chefs are sent home and the strongest three go through to this week's Quarter Final.

Each chef has to face the dreaded skills test. Under the scrutiny of all 3 judges, the initial moments for any competitor are nerve-wracking, as their knowledge, palate and experience are weighed up. Tonight, the first 3 chefs take on the terrifying prospect of tackling Marcus' Crab Omelette Arnold Bennett, they have 20 minutes to either hold their nerve or find themselves in a terrible scramble. The next three chefs have to dig into their pastry repertoire when Monica asks them to create a Puff Pastry and Vanilla Mousseline Layered Dessert. A steady hand and a sweet tooth are a bonus to succeed in this tricky test.

First up the chefs are challenged to an Invention Test, centred around The Judges Favourite Ingredient. This week, Marcus selects from every kitchen around the world- rice. The chefs will be under pressure to elevate this humble ingredient and create a dish with impact. Along with a whole range of other ingredients to choose from, the 6 chefs must deliver one plate of food that puts rice firmly at the forefront. With 10 minutes to select the ingredients and 70 minutes to cook, there's a lot riding on this plate. Only the four strongest contestants will go on to the next challenge, to cook for the restaurant critics and for 2 chefs, it's the end of the competition.

First, is the infamous Skills Test, followed by a chance to cook their own unique Signature Dish for the judges. At the end of this heat, 3 chefs will be sent home and the strongest 3 will go through to this week's Quarter Final. Each professionals journey begins with the dreaded Skills Test. This is the first time in front of the judges and not only are their knowledge, palate and experience weighed up, but so is their mettle.

First up, is the Skills Test. Tonight, 3 chefs face the terrifying prospect of cooking an elegant dish at Monica's request. They have 15 minutes to perfectly prep and cook razor clams dish with a shallot, caper and tomato sauce. The next 3 contestants have been given 15 minutes by Marcus to prep and cook his calves liver with a bordelaise sauce. Timings, texture and taste are key to making this dish a delight, not a disaster.

First up, the chefs face an Invention Test, featuring a particular ingredient. This week, Monica has selected a favourite, found at the heart of many cuisines, the onion. The professionals will be under pressure when faced with a whole host of varieties of onion and a huge array of other ingredients. They need to focus and rapidly find inspiration to cook a dish in 70 minutes, that will deliver flavour, finesse, sparkle, and an inspired approach to the onion. At the end of the challenge, 2 contestants will leave the competition.

In just 15 minutes, professionals will have to show they can muster this classic french sandwich to Michelin-starred standards. The remaining 3 chefs face a test set by Monica- a pea risotto. Can the chefs deliver a dish with flavour, flair, and rice with the right bite to put a smile on the judges' faces? Up next, all 6 contestants have a chance to redeem any earlier mistakes when they cook their own signature dish for Monica, Marcus and Gregg. In 1 hour and 15 minutes, they must inspire the judges with their creativity, taste and personal style. This is their opportunity to show off their culinary talent before the judges decide which 3 chefs are sent home, and which 3 go through to this week's quarter final.

To begin their fight for the coveted title, the chefs face the dreaded Skills Test. 3 chefs face what could be the toughest 20 minutes of their careers, set by Marcus. Under the scrutiny of the 3 judges, the professionals are reliant on their fish filleting skills and sauce prowess when they have to cook a monkfish with vermouth sauce for the expectant panel. THe next 3 into the Masterchef will have to conquer any nerves when they are asked by Monica to conjure up a crepe souffle with a caramel sauce.

The chefs face an Invention Test, featuring one key favourite ingredient selected by the judges. This week, Marcus wants them to create a dish that uses coffee to its full potential. The professionals will have 10 minutes to decide whether to go sweet or savoury, and which ingredients to plump for in the larder, before cooking their dish. With just 70 minutes, they will have to create a dish that is beautiful, balanced and brimming with technical ability to keep them in the competition. At the end of the challenge, two contestants will leave.

The chefs will be whisking, and quite possibly wishing they had brushed up on their plant-based cuisine, when Monica asks them to cook a braised artichoke with saffron aquafaba mayonnaise. For the next 3 chefs, Marcus has chosen chicken schnitzel holstein. The hopefuls have to display perfect butchery skills from the off and, within 20 minutes, cook a dish of beautifully crunchy, golden, breaded chicken with a friend egg on top. The contestants will be hoping for a cracking start to the competition, whilst the judges size up their skills.

The contestants will be hoping to wow the judges with their take on Monica's dish of Oeufs Meurette. They have 15 minutes to show cooking mastery in making a rich and flavourful bourguignon sauce, topped off with the perfect poached egg, whilst under the scrutiny of Monica, Gregg and Marcus. When the last 3 chefs step into Marcus' test, there will be more egg-cracking and whisking, when they're asked to create drop scones and a suzette sauce- a perfect batter mix and a sauce that goes up in flames.

The professionals face an Invention Test, in which the key ingredient specially selected by the judges must feature. As Monica has chosen squash this week, the chefs are given a larder with a wide range of pumpkins, squash and other sweet and savoury ingredients to choose from. They will have 70 minutes to cook a dish that shows off their versatility to creative nous. This dish has to be worthy of seeing them through to the next vital round. Only 4 chefs will succeed and have the chance to cook for the restaurant critics.

The first challenge for the 12 chefs is to cook against each other in the most intense Invention Test of the competition. They need to impress the three judges with one spectacular plate of food, created from a larder of fresh sweet and savoury ingredients. But Monica and Marcus want the chefs to rest on classic cooking skills and have stripped the MasterChef kitchen of all the modern gadgets. With two and a half hours to create an innovative plate of exquisite food, they must seize this opportunity to make an impact on the judges. Only eight will be guaranteed to move onto the next round.

Only 10 outstanding chefs remain in the competition and they have been split into 2 groups of 5. The first group is set two daunting challenges by Monica and Marcus, which will test them further than any previous round. In a brand-new event, the chefs are taken to Pergola, a roof top location in West London where the judges announce the first ever MasterChef Pop Up Challenge. In three hours, with limited equipment and facilities, the chefs have to show off their versatility and style, creating and serving a dish that will win over the judges and the specially-invited guests. The diners are a collection of the UK's brightest talent and stars of the Street Food and Pop Up scene. In a further twist, the guests will be asked to vote for their favourite dish. The chef with the most votes will sail straight through to the Semi-Finals.

Tonight, the second group of 5 chefs face two intense challenges set by Monica and Marcus in a bid to become Semi-Finalists. In the second round of the brand-new MasterChef Pop Up Challenge, the judges announce that the chefs have three hours, with limited equipment and facilities to produce a knock-out plate, which will showcase their versatility and style. This dish will have to win over the specially-invited guests because they will be voting for their favourite food on offer. The diners are a collection of the UK's brightest cooking stars of the Street Food and entrepreneurs of the Pop Up Industry. The contestant that bags the most votes from these discerning diners will sail straight through to the Semi-Finals.

The remaining 8 chefs brace themselves to cook up a storm as they face a double beast of a challenge in the Masterchef ktichen. Only 6 chefs can retain their place in the competition and, with it, the opportunity to cook in some of the most influential and unique restaurants in the UK. The first challenge is cooking against each other to create a dish inspired by the people or place that really triggered a love of food and a desire to make it their world. This plate must evoke this special Food Memory for the judges. From Mum's chocolate cake, street food or the first great boss, the professionals need to cook with passion and pride and create something truly magical. If they inspire the judges, they will be sent straight through to the next round.

Tonight, the first 3 remaining Semi-Finalists battle it out for a place in The Finals. They are given the opportunity to work alongside one of the UK's most exciting chefs. Gareth Ward is creating a culinary uproar in his destination restaurant, Ynyshir. Situated in remote and stunning scenery in West Wales, the restaurant is drawing diners from across the world.

It's the last Semi Final and the second group of chefs is in close competition for a place in The Finals. For their first challenge, the three contenders are sent to cook at one of London's most impressive and ambitious new restaurants, Hide, the latest jaw-dropping project of Michelinstarred chef, Ollie Dabbous. Ollie came through the ranks of the world's greatest kitchens, under Gary Jones at Le Manoir Aux Quat' Saisons, Noma in Copenhagen and Mugaritz in Spain. His first lone venture, the eponymous Dabbous, set the culinary world on fire with artful and delicate food, which won him his first Michelin star. In 2017 Ollie opened 'Hide', set across three floors and with 500 covers, and was awarded a Michelin star within an incredible six months.

Over the next 3 nights, the finalists will face the close scrutiny of some of Britain's greatest chefs, and immerse themselves in a world-class kitchen, when they have the unique opportunity to work with a chef who is re-defining the bar for gastronomy in Portugal. The first challenge the four chefs face in The Finals is a once-in-a-life-time chance to cook at one of the most prestigious events in the UK culinary calendar- The Chef's Table. It's the only time in the year when so many of the country's top culinary talents gather together to dine.

In tonight's penultimate challenge, the 4 remaining chefs fight to secure their place to be one of the final 3, and the opportunity of a lifetime to work in the kitchen of one of the world's leading chefs. The judges begin by setting the four finalists a brief in the MasterChef Kitchen- creating a single exceptional and evocative dish, inspired by a place that is special to them. In 90 minutes they strive to cook the best dish of their professional lives. At this point in the competition the judges' scrutiny is intense, and one finalist will be sent home.

Now, just 3 chefs remain. This will be the last time they cook in the competition and the evening will end with one of them receiving the ultimate prize.
