How To Use The Smoke

When Smoking a steak using the smoke to enhance the flavor. No need to excited about a bunch of fancy marinades or rubs for this recipe. We just want the smoke to do the hard work for us

If you like a mild smoke flavor cherry wood is a great choice for your steak. This steak will taste great and look incredible.

Want a little stronger smoke, with some extra sweetness, that is still mild smoke flavor? Go with apple, pecan, or maple.

Want something stronger with a bold taste? Use mesquite, hickory, or oak wood. This wood will add amazing flavor to the steak.

Best Type Of Steak

What type of steak do you ask? Well, what’s your favorite type of steak? You can smoke just about anything. I prefer Ribeyes and T-Bones. You can use any type you prefer.

The main thing to remember is the thicker the better. The thicker it is the more smoke flavor you can get into it. I try not to go any thinner than 1-1 1/2 inches thick. Anything thinner and it just cooks too fast. Thin cuts will work but you just won’t get as much smoke flavor.

I just recently did my first youtube video and I used a steak thinner than I normally use. It was around an inch thick and it cooked a lot faster than I was expecting, luckily I try to check on things early.

How Long To Smoke the Steak

It roughly takes 45 ins to an hour to cook a steak. It all depends on the cut and the thickness. anything under an inch thick I would check after 30 mins. The best way to be sure is to use a meat thermometer as found on this page

The most important thing to know when it comes to smoking a steak is you want to cook to temp not by how long. It is best to go by time as a rough idea, as to when to check internal temp.

For the recipe in this article, we will be doing a reverse sear. This means we will cook the steak to a temp 5°-10° F short of what we want in this case 125°-130° F . We will be going for medium rare and a final temp of 130°-135°.

Once we hit around 125° F. We will move on to the second part of the cook the sear.

How To Smoke A Steak

  • Startup pellet grill. Preheat to 225°F. Remember different pellet types will change the flavor
  • Season Steak. Pat steak dry with a paper towel. Season both sides with kosher salt and ground black pepper
  • Place steaks on the grill and close the lid. Cook for 45 mins to an hour depending on thickness. Remember, want an internal temp of  (115° for rare, 125° for medium rare, 135° for medium, 145° for medium well, and 155° for well).
  • Once you reach your desired temp remove steak from the grill and turn the grill up to 450°-500° F(cover the steak if you like while the pellet grill is warming up)
  • Place the steaks back on the pellet grill once it reaches temp. Sear them for approximately 2 minutes per side. Continue to cook the steaks until they reach the final desired internal temp (125° for rare, 135° for medium rare, 145° for medium, 155° for medium well, and 165° for well done).
  • Then let them rest for 10 mins and serve( I cover them in tin foil to help keep them warm)

1.Lightly coat the bottom of your cast iron skillet with a high heat oil or butter. Place Skillet in smoker , grill or on stove. Once skillet is up to temp
