Meaty, country style pork ribs are cooked low and slow in the Crock Pot making them fall off the bone tender. The simple sauce, made with ketchup, honey, soy sauce, with a splash of vinegar, is perfectly seasoned and infuses the ribs with amazing flavor while they cook.

This recipe for Crock Pot Country Style Pork Ribs gives you all the things you love about BBQ without going to a lot of trouble. There’s no grilling, smoking, and no need to turn on your oven. You get all the wonderful flavor of barbecued ribs from the slow cooker any time of the year.

This recipe calls for 3-4 pounds of country style pork ribs, so you’ll need a larger Crock Pot. I recommend using a 7 or 8-quart slow cooker so that the ribs are not crowded in the pot.

What Are “Country Style” Pork Ribs?

The interesting thing about country style pork ribs is that they are not actually ribs at all. They are a cut of pork meat, made from the end of the loin. Since the cut comes from the shoulder, the texture is like what you’d find from pulled pork. The bone-in “ribs” look similar to individually cut pork ribs, but you can also find them boneless.

Do You Need To Sear The Ribs Before Cooking?

For this recipe, it’s really best to get a good sear on the ribs. It helps impart extra flavor. I use a cast iron skillet (get it screaming hot) to brown the ribs. Work in 2 batches so that the ribs do not touch while you’re searing the meat and fat.

How Long Do Pork Ribs Cook In The Crock Pot?

To ensure that the ribs are super tender and loaded with flavor, I recommend cooking them on low for 8 hours. You can shorten the time and cook for 6-7 on high.

  • 3-4 pounds bone-in country style pork ribs
  • 1 tablespoon olive oil
  • salt and pepper
  • 3/4 cup ketchup
  • 1/4 cup soy sauce
  • 1/3 cup honey
  • 1/4 cup red wine or apple cider vinegar
  • 3 tablespoons minced garlic
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried mustard
  • chopped fresh parsley – optional

  • Heat olive oil in a cast-iron skillet or heavy bottom pan. Sprinkle ribs with salt and pepper and sear, on all sides, until golden. Remove the ribs from the pan and place them in the Crock Pot.

  • To a medium-size bowl, add ketchup, soy sauce, honey, vinegar, garlic, chili powder, onion powder dried thyme, dried parsley, and dried mustard. Whisk together and pour over the ribs. Place the lid on the Crock Pot and cook on HIGH for 6-7 hours or LOW for 8 hours until the ribs are done.

  • Remove the ribs to a serving platter, and spoon over the sauce from the bottom of the Crock Pot. Sprinkle with fresh parsley and serve.
