250g SunRice Steamed Jasmine Rice 400g Coconut milk 1 tsp Vanilla bean paste 1/2 cup Sweetened condensed milk 1 cup Fresh or frozen raspberries 1 tbsp Caster sugar 2 Passion fruit, halved

Method


  1. Combine the coconut milk, vanilla and condensed milk in a medium saucepan. Stir over medium heat for 5 minutes. Reduce heat to low, simmer, uncovered 3-5 minutes or until mixture thickens slightly.

  2. Tip the rice into a bowl, use your fingers to separate the grains. Stir the rice into the hot coconut milk mixture. Cook, stirring for 5 minutes. Remove from the heat. Cover and set aside 5-8 minutes until thickened.

  3. Meanwhile, combine the raspberries and caster sugar in a bowl. Set aside 15 minutes. Just before serving spoon the passion fruit pulp over the raspberries and stir to combine. Serve with the warm or cold coconut rice pudding.

  4. Tip: On standing and cooling the rice will absorb all the liquid and become thick. When reheating, drizzle a little extra coconut milk or fresh milk over the thickened pudding and warm in the microwave for 2-3 minutes on Medium/50% power.

Can you make rice pudding with sweetened condensed milk? You certainly can!

We’ve recently discovered the joy of chocolate rice pudding (starting with leftover but perfectly cooked brown rice) but dare I say it, I love this sweetened condensed milk rice pudding AT LEAST as much. Maybe more.

Because you only need 3 ingredients.

And one of them is leftover brown rice and the other is a super shortcut for a creamy, dreamy treat: sweetened condensed milk.

What you need for rice pudding with sweetened condensed milk

  1. Cooked rice
  2. Milk
  3. Sweetened condensed milk (not evaporated milk)

That’s it! Can you add extra vanilla? Yes.

Use coconut milk instead of regular dairy milk? Absolutely. Just be sure to include the coconut fat.

What about topping with chocolate chips, or fudge sauce? Yes, and yes please!

All of those are delicious and work every time.

The only must-have ingredients are leftover rice and sweetened condensed milk. It doesn’t matter what brand of sweetened condensed milk you use. Nestle makes a very popular version but I usually find Eagle Brand sweetened condensed milk at my store.

Add an extra teaspoon of vanilla or swap the dairy milk for a cup of coconut milk (including the fat). But don’t leave out the sweetened condensed milk!

2 cups cooked brown rice

14 ounce can of sweetened condensed milk

1 cup of regular whole milk

  1. Measure out your rice. (I used 2 cups of cooked brown rice.) Put the rice in a medium size pan.
  2. Add one 14 ounce can of sweetened condensed milk. 
  3. Add one cup of regular whole milk.
  4. Stir and bring to a low boil.
  5. Simmer for about 10 minutes, stirring often (seriously, don’t walk away), until the rice has started absorbing all that gooey milky goodness.
  6. Store any extra 3-ingredient rice pudding in the fridge for up to 1 week (but it’ll never last that long.)

Not only is our rice pudding easy to make with condensed milk, but with all that whole-grain rice, it passes for a breakfast too. Just add a sprinkle of raisins or dried cranberries.

What is sweetened condensed milk?

Wikipedia says:

Condensed milk is cow’s milk from which water has been removed. It is most often found with sugar added, in the form of sweetened condensed milk, to the extent that the terms “condensed milk” and “sweetened condensed milk” are often used interchangeably today.

One nice saucepan. I have a similar one that I’ve used for the last 15 years. 

Spouted measuring cup for the milk. This is the set I have, and love.
Wooden stirring utensil. I like them better than anything in silicone and have a set like this.
