TL;DR: Just watch the OVA (110 episodes) and 2 movies.

1. Waga Yuku wa Hoshi no Taikai (1988)
2. Arata Naru Tatakai no Overture (1993). An expanded version of the first two episodes of the OVA.
3. Watch the OVA, but don't watch the previews at the end of the episodes. Because they're more like spoiler than preview.

You should definitely watch the OVA first, not the 2018 series. And I don't recommend you to watch the Gaiden series (2 seasons, 52 episodes) after OVA. They're like fillers, just waste of time. This is just my opinion, of course.

You are so wrong, best way to watch it is in the chronological order, and side stories are part of the whole history.

Just google legend of the galactic heroes chronological order and watch it. The only thing is that is not so easy to find the side stories.
If you watch chronologically, all side stories will be before the main series, and you’ll get there so much more invested and knowing the protagonists backgrounds.

Worst way to watch the GED is watching with chronological order. There is a reason why producers released the Gaiden series after the OVA. If you watch the Gaiden first, you're gonna miss a lot of things. And Gaiden series don’t add much to the story.

I personally recommend the OVAs, movies, side stories, and then remake. Breaking up the OVA with the movies hurt my watching experience a bit. The side stories are nice to watch after imo, brings me a lot of nostalgia.

It's better to watch this franchise in production order than chronological order imo.
