With the added potatoes and carrots in this recipe, you definitely want more moisture to be in the crockpot so they will be cooked thoroughly. That’s why I add the beef broth to my recipe. It helps to create the moisture and juices needed to cook the carrots and potatoes. Some recipes for Mississippi pot roast call for mashed potatoes on the side, but I like to make mine all in one simply because it makes it easier on me to get dinner prepped and ready to eat in time for dinner.
