How long to boil potatoes and eggs
This is the question that my daughter posed to me this week.  She was making a potato salad to take to uni for lunch.  She wanted to boil potatoes, as well as hard boil some eggs to go into her potato salad.  So as she was preparing to boil the potatoes she asked “Can I cook potatoes and eggs together?”  I wasn’t sure of the answer but she thought why not and that’s what she did.

When I was writing this post I googled her question.  A number of people have cooked potatoes & eggs together for years.  A few people were concerned about bacteria from the egg shell but as others rightly pointed out, your boiling it so if there happens to be any bacteria it isn’t going to survive.  So in answer to the question can you boil potatoes and eggs together, you certainly can.

Her potato salad was similar to my Potato Salad but she just used what was on hand.  She made it with potato, eggs, bacon & chopped up spinach with whole egg mayonnaise.

What ingredients do you like to have in a potato salad?

Potato Salad with Egg, Bacon & Spinach

Servings: 1

  • 3 tiny potatoes enough for 1 serve
  • 2 eggs
  • 1 rasher of bacon
  • handful of baby spinach
  • mayonnaise to taste approx 1Tbsp

  • Wash, peel and chop potatoes into bite size chunks.

  • Place potatoes and whole eggs into a saucepan.  Cover with warm water and bring to the boil.  Boil for 5-10 mins until potato is cooked through and the eggs will be hard boiled.  Drain and set aside to cool.

  • Chop up the bacon and the spinach.  Cook the bacon in a fry pan, add the spinach when the bacon is cooked and stir for about a minute.  Drain on paper towel.

  • Peel and chop the eggs.

  • Refrigerate all cooked ingredients for about 15 mins to cool.

  • Combine all the ingredient and stir in the mayonnaise.

  • Enjoy!

The recipe is for 1 serve but you could easily increase it to make more.

  • 2 tbsp white wine vinegar

  • 1 tbsp extra virgin olive oil

  • 1 tsp Dijon mustard

  • 4 eggs

  • 2 tbsp diced sweet spiced gherkins

  • 1 tbsp drained baby capers, rinsed

  • 2 tbsp roughly chopped fresh flat-leaf parsley leaves

  • 1 tbsp roughly chopped fresh dill

  • 1 tbsp chopped fresh chives

  • Select all ingredients

  • Place potatoes (800g chat potatoes) in a large saucepan. Cover with cold water. Bring to the boil over medium-high heat. Boil for 15 minutes or until tender. Drain. Set aside for 10 minutes or until cool enough to handle.

  • Halve potatoes. Place in a serving bowl. Whisk vinegar (2 tbsp white wine vinegar), oil (1 tbsp extra virgin olive oil) and mustard (1 tsp Dijon mustard) in a small bowl. Add to potatoes. Gently toss to coat. Set aside for 1 hour, tossing occasionally.

  • Meanwhile, place eggs (4 eggs) in a small saucepan. Cover with cold water. Cover and bring to the boil over high heat. Reduce heat to medium. Remove lid. Simmer gently for 2 minutes. Remove pan from heat. Drain. Refresh under cold water. Carefully peel eggs.

  • Combine gherkin (2 tbsp diced sweet spiced gherkins), capers (1 tbsp drained baby capers, rinsed), parsley (2 tbsp roughly chopped fresh flat-leaf parsley leaves), dill (1 tbsp roughly chopped fresh dill) and chives (1 tbsp chopped fresh chives) in a bowl. Add to potato mixture. Gently toss to combine. Cut eggs in half and add to salad. Season with salt and pepper. Serve.

How long does it take potatoes and eggs to boil?

Place potatoes and whole eggs into a saucepan. Cover with warm water and bring to the boil. Boil for 5-10 mins until potato is cooked through and the eggs will be hard boiled. Drain and set aside to cool.

Cover the pot with a lid. Cook the potatoes in gently boiling water until tender, about 15 minutes for small Red Potatoes, New Potatoes or cubed large russet potatoes, and 20 to 25 minutes for quartered potatoes. Remember the size of the potato pieces is a huge factor in how long it takes to boil potatoes.
