Over the last couple of years our gatherings have been a little smaller, with just the 5 of us, and I have found that I really enjoy roasting a turkey breast.  Turkey breasts are the perfect size for my family, they’re easy to make and they’re quick!  Sometimes I’ll even make 2 so that I can use one for leftovers…I mean, what’s Thanksgiving without a hot turkey sandwich with gravy at 10 o’clock at night?!  😉  Or you can use the leftovers in recipes like Baked Turkey Cheddar Pull-Apart Sliders, Turkey and Rice Soup, Turkey Pot Pie, or even a Hot Turkey Buffalo Dip.  Leftovers are meal time savers!

Slow Roasting Turkey

For this recipe I used a slow roasting technique for cooking the turkey.  Essentially you roast the turkey at 250 degrees for a couple of hours.  The slow and steady roasting results in a tender and juicy turkey breast.  Not only is it delicious to cook the turkey this way, I like the extra time it gives me to work on the side dishes while the turkey is in the oven.

This savoury Herb Marinated Turkey Breast is slow roasted, resulting in tender and juicy turkey.  This easy and delicious recipe is perfect for your holiday dinner!

Ingredients

Scale 1x2x3x

  • 2 boneless (skinless turkey breast (about 2 pounds))
  • 2 tbsp chopped rosemary
  • 2 tbsp chopped chives
  • 2 tbsp chopped thyme
  • 5 tbsp olive oil
  • salt
  • pepper

Instructions

  1. Mix together the chopped herbs and olive oil.
  2. Spread the herb mixture evenly over the turkey breast and let marinate in the fridge for at least 3 hours, or overnight.
  3. When you’re ready to roast the turkey, preheat your oven to 250 degrees.
  4. Lay the turkey breast on a shallow baking sheet or pan.
  5. Season generously with salt and pepper.
  6. Roast for approximately 3 hours at 250 degrees, or until the internal temperature at the thickest part reaches 165 degrees.
  7. When the turkey is done, let it rest for about 10 minutes before slicing and serving.
