Now that corned beef season is among us, it is time to share my favorite Air Fryer Corned Beef recipe.

This recipe ditches the seasoning packet that comes with it and instead uses a simple seasoning that is out of this world delicious!

I have been making Corned Beef and Cabbage on St. Patrick’s Day for many years. Because it is an American-Irish tradition, I have enjoyed cooking this classic dish either in the Crock Pot or in my Instant Pot.

The absolutely most delicious way to cook corned beef is in an air fryer, using this recipe!

However, since I have had the opportunity to make corned beef in my Power Air Fryer 360, I can guarantee you that I will never make it any other way! It is that good!

What is Corned Beef?

Corned Beef refers to a beef brisket, which is a tough piece of meat, and tenderizes it through a salt-curing process.

Traditionally beef brisket is a very tough cut of meat that requires slow cooking to become soft and tender. And although a corned beef brisket also requires low and slow cooking, the brine will help this cut of meat to become super tender.

You can find sliced cooked corned beef at your local deli that is most often used to make Reuben sandwiches. And of course there are now cans of corned beef that is frequently used to make Corned Beef and Hash.

However, in order to make this recipe, you need the flat cut section of a corned beef brisket. Typically you can find it in the beef refrigeration section at your local grocery store. And it is easily found during the month of March.

A typical corned beef brisket will have a lean side and a fatty side.

Look for a sealed plastic package that contains the brisket with some liquid at the bottom. It will most likely also contain a seasoning packet that is used during the cooking process.

Although for this air fryer corned beef recipe, we are going to discard the seasonings and use our own blend of flavors instead!

Ingredients

Corned Beef Brisket, 3-4 pounds
Brown sugar
Dijon mustard
Apple cider vinegar

How to cook beef brisket in air fryer
Spread the glaze on top of the lean side of the brisket. Then flip it over on a large piece of foil and glaze the fatty side as well.

Instructions

Preheat Air Fryer for at least 3 minutes. Although not all brand of air fryers require you to preheat, we highly recommend you do so for this recipe.

While the air fryer is heating, prepare the seasoning for the corned beef. Do this by mixing together the brown sugar, Dijon mustard, & apple cider vinegar together in a small bowl and set aside.

Remove corned beef from the package and discard the seasoning packet that came with the brisket.

Once you have spread the glaze on both sides, tightly wrap the brisket in a foil packet.

Now rinse the meat under cold water, being sure to rinse both the top and bottom sides. This will help remove some of the salty brine that is on the surface of the brisket.

When you are finished rinsing, place the meat on a plate and pat it completely dry with paper towels. You may need to do this a couple of times to make sure that it is nice and dry.

Then coat the corned beef with the glaze using a pastry brush and tightly wrap it in aluminum foil. *You will not use all of the glaze however keep the glaze for basting later.

Cooking Time

Place corned beef in the Air Fryer for 1 hour.

Once the hour is up, carefully unwrap the top of the foil just so you can see the top and sides. You don’t want to completely unwrap the entire pouch.

Once the first hour is up, carefully open the packet and flip the corned beef over.

Brush half of the remaining glaze on top and loosely close the foil packet.

Then place the brisket back into the air fryer and continue to cook for another 40 minutes. After the second cook time is up, unwrap the top of the foil and add the remaining marinade on top of the brisket.

Keeping the foil pouch opened, but with the corned beef still sitting in the liquid, carefully place back into the air fryer.

However, this time increase the air fryer temperature to 400°F (200°C) and cook for an additional 8-10 minutes or until the glaze has become nice and caramelized.

Be sure to let the corned beef rest before slicing it against the grain.

Then carefully remove the corned beef from the air fryer and let it rest for 10 minutes. When you go to serve, be sure to slice it across the grain so that the meat remains tender.

  • 1/4 cup dijon mustard
  • 1 Tbsp apple cider vinegar

Instructions

Preheat Air Fryer at 360°F (180°C) for at least 3 minutes.

  1. In a small bowl mix brown sugar, Dijon mustard, & apple cider vinegar together. Set aside.
  2. Remove corned beef from package and rinse under cold water for 1 minute. Pat dry and coat the corned beef with glaze. Place, fat side up and wrap tightly in aluminum foil. *You will not use all of the glaze however keep the glaze for basting later.
  3. Place in Air Fryer for 1 hour.
  4. Unwrap aluminum foil just so you can see the top and sides. You don't want to completely unwrap the pouch. Carefully flip the corned beef over so that the fat side is now down. Brush half of the remaining marinade on top and loosely close the aluminum foil.
  5. Continue to air fry for another 40 minutes. Open the foil pouch, but leave the corned beef and juices in the bottom and add the remaining marinade on top of the brisket and increase air fryer temperature to 400°F (200°C) for an additional 8-10 minutes.
  6. Remove from the air fryer and let it rest for 10 minutes. Slice across the grain and serve.
