How to cook steak in air fryer medium rare

A perfectly seared steak can seem like a daunting task. Getting the golden, crusty sear on the outside and trying not to overcook your steak can be difficult. What if we told you that your air fryer can take all of that stress away? 

Guess what? It can! Pop that steak into the air fryer and leave it to cook that steak to a perfect medium rare without splattering your stove with oil or filling your kitchen with smoke. And with that extra time you just gave yourself, why not stir up a little herb butter or make yourself some crispy Air Fryer Potatoes to go along with your perfectly cooked steak? It’s not mandatory, but it sure is delicious.

What if I have a different cut of steak?

We love using a thick-cut ribeye in this recipe, but if you prefer a different cut, you can still use the air fryer! Just be sure to adjust the time according to the thickness of your steak.

How do I know when my steak is cooked?

Professional chefs usually can tell a steak’s internal temperature just by touching it. But unless you’ve cooked hundreds of steaks in your life, we don’t recommend you rely on this method. The best way to tell a steak’s temperature is to use a meat thermometer. Just keep in mind that your steak will continue to cook for a bit after you take it out of the air fryer, so if you’re hoping for medium-rare, you should pull your steak when it reads 130°. It will rest up to 135°, so that when you slice it, it will still be perfectly pink and juicy.

What other herbs can I use in my compound butter?

We love the combination of chives, parsley, rosemary, and thyme with the minced garlic here, but if you want to switch it up, you can use any combination of soft and hard herbs that you like. Others that might be particularly delicious include oregano, basil, or even sage. You could even throw in some citrus zest if you want. Just make sure your herbs are fresh (not dried) and finely chopped, and when in doubt, keep it simple — you can’t beat a good chive and parsley butter.

What can I serve with this?

    butter, softened

  • 2

    cloves garlic, minced

  • 2 tsp.

    freshly chopped parsley

  • 1 tsp.

    freshly chopped chives

  • 1 tsp.

    freshly chopped thyme

    freshly chopped rosemary

    (2 lb.) bone-in ribeye 

  • Kosher salt

  • Freshly ground black pepper

Directions

    1. Step 1In a small bowl, combine butter and herbs. Place in center of a piece of plastic wrap and roll into a log. Twist ends together to keep tight and refrigerate until hardened, 20 minutes. 
    2. Step 2Season steak on both sides with salt and pepper. 
    3. Step 3Place steak in basket of air fryer and cook at 400° for 12 to 14 minutes, for medium, depending on thickness of steak, flipping halfway through. 
    4. Step 4Top steak with a slice of herb butter to serve.
