Twice baked potatoes are one of the most delicious side dishes. They’re full of flavor and they go well with so many different meals. I consider them to be a step above regular baked potatoes since all the toppings are mixed evenly throughout the potato filling.

These air fryer twice baked potatoes couldn’t be easier to make. The potatoes get baked right in the air fryer, and the skins come out nice and crispy. They’re faster to make than the oven version, and they taste just as good.

Rich in vitamin C and potassium, potatoes are a healthy, affordable real food staple. Many of the nutrients are in the skin, so I like to eat the skin along with the delicious filling.

Air Fryer Twice Baked Potatoes Tips

Depending on the size of your air fryer, you may only be able to fit 2 or 3 potatoes. I can fit 4 small potatoes in my air fryer, and I find this size (6 to 8 ounces) to be perfect for twice baked potatoes. They’re a fairly heavy side dish, so you don’t need to use big potatoes.

I don’t add any salt to the potato mixture because the cheese and bacon are already salty. You can add some if you’d like. Taste the mixture before filling the potatoes, and adjust the seasonings as desired.

Sometimes you’ll see twice baked potatoes filled extra high with the potato filling mixture. If you want to achieve this effect, you can cook an additional small potato, and add its insides to the filling mixture. 

Can You Freeze Twice Baked Potatoes?

These air fryer twice baked potatoes can be refrigerated for several days or frozen for several months. Either way, they should be stored in an airtight container.

To reheat the potatoes, place them in a foil-covered baking dish and heat at 350 degrees until warm. I recommend defrosting the frozen potatoes in the refrigerator overnight before reheating. This will speed up the process.

Ingredients

  • 4 small russet potatoes (6 to 8 ounces each)
  • 2 tbs olive oil
  • salt & pepper to taste
  • 1 cup cheddar cheese shredded
  • 4 pieces bacon cooked and chopped finely
  • 1 tbs butter
  • 1/2 cup sour cream
  • 2 tbs chopped chives

Instructions

  • Pierce the potatoes several times with a fork. Spread the olive oil on the potatoes, and sprinkle with salt and pepper to taste.

  • Place the potatoes on the rack of an air fryer. Set the temperature to 400 degrees and cook them for 20 minutes. Open the air fryer and flip the potatoes. Cook for another 15 minutes, then check to see if the potatoes are done by poking one with a toothpick. If the toothpick goes through the potato easily, they’re done cooking. If not, keep checking them every 5 minutes. A 6 to 8 ounce potato takes about 40 to 45 minutes total in the air fryer.

  • Remove the potatoes and let them cool for a few minutes. Once they can be safely handled, cut the potatoes in half and scoop out most of the potato into a large bowl. Leave a portion of the potatoes along the skin so they can hold their structure.

  • In the large bowl, add the shredded cheese, crumbled bacon, butter, sour cream, and chives to the potatoes. Mash with a potato masher.

  • Transfer the filling back into the potato shells. Return the potatoes to the air fryer and cook at 400 degrees for 5 more minutes. Top with additional cheese, bacon, and/or chives if desired. Serve warm.
